The Sable vineyard is located in Blewitt Springs and consists of deep sandy soils. It is 6 hectares of 80-year-old Syrah and Grenache vines. The fruit was hand harvested on the same day, with roughly 60% Syrah and 40% Grenache. Gentle extraction has made for a light frame and structure, there is a plum and violet core, the tannins are fine from the sandy soils, and there is a refreshing lift with the long line of natural acidity
